Korean Street Tacos

May 31, 2019April 24, 2021 / rcrossranch

This is it. This is the go-to every week if we could. It takes 30 minutes, and the payoff is fantastic. The ingredients are simple and the taste is just amazing. When we are filling out the meal calendar, each kiddo requests this first. We usually use ground turkey, the beef ends up feeling a … Continue reading Korean Street Tacos

Coconut Skewer Chicken

January 12, 2019November 28, 2019 / rcrossranch

These ended up tasting really good, but they took a while to put together. Maybe I need to learn how to cut chicken faster 🙂 We served these with rice and broccoli, it all went together well. I made a 1 1/2 recipe and it fed 6 with a few sticks left over. Time to … Continue reading Coconut Skewer Chicken

Hope everybody is having a great Memorial Day!
Day 1 progress: I was able to stand and move forward, but was not able to stay upwind or foil. Keeping at it.
Today is ‘learn to wing foil’ day for me. My goal is to actually get up on foil consistently in a week. Good wind, good harbour. It won’t be pretty, but it will be fun!
Last night in Carriacou for a while, looking forward to getting back to Bequia tomorrow!
Epic anchorage in Carriacou today! It got me thinking, I might make a short video on how you actually get into an anchorage like this and get confident you’re going to stay put while rotating 360 degrees. Of course it starts with a considerate boat neighbor who left room for us :)
Sailing down in the southern Caribbean is really neat because you can see where you are going even though it’s 20 or 30 miles away.
